My favourite leftover recipe
Leftovers frequently receive an unfair rap in the culinary world. Some perceive them as uninspiring leftovers from past dinners, doomed to languish in the back of the refrigerator before being discarded. However, I am confident that with a little creativity and innovation, leftovers may be converted into wonderful, satisfying meals that equal their originals. This simple yet satisfying dish not only utilizes leftover rice and vegetables but also allows for creativity and customization. Today I'd like to share with you my favourite leftover recipe - Egg Fried Rice.
The Recipe
Ingredients
- Leftover cooked rice (preferably day-old)
- Leftover cooked vegetables (such as carrots, peas, bell peppers, and broccoli)
- Leftover cooked protein (chicken, shrimp, pork, or tofu)
- 2-3 eggs, beaten
- Vegetable oil
- Garlic, minced
- Ginger, minced (optional)
- Green onions, chopped
- 2-3 Chillies
- Salt and pepper to taste
Instructions
Heat a bit of vegetable oil in a large skillet or wok over medium-high heat.
Add the minced garlic (and ginger if using) to the skillet and sauté until fragrant.
Add the leftover cooked protein to the skillet and stir-fry until heated through. If using raw protein, cook it first before proceeding to the next step.
Push the protein to one side of the skillet and pour the beaten eggs into the other side.
Allow the eggs to cook undisturbed for a few seconds until they start to set, then gently scramble them until cooked through.
Once the eggs are cooked, combine them with the protein in the skillet.
Add the leftover cooked vegetables to the skillet and stir-fry for a few minutes until heated through.
Add the leftover cooked rice to the skillet, breaking up any clumps with a spatula.
Stir-fry the rice mixture for a few minutes, allowing the flavors to meld together.
Add chopped green onions to the skillet and stir to combine.
Taste the fried rice and season with salt and pepper as needed.
Once everything is heated through and well combined, remove the skillet from the heat.
Serve the egg fried rice hot, garnished with additional green onions if desired.
