A list of quick and easy meals I make as a student

Being a student it can be difficult to know what to make and think of new ideas every week. In this blog we will be discussing new ideas of what you can make as a student as well as a recipe for a sweet and spicy honey garlic chicken. 

My name is Leila and I will be giving you some ideas on what i cook and eat at university. Another one of our Reslife assistants Kitty also made a TikTok on what she eats in a day as a student. Honey Garlic Chicken Recipe

This is a nice chicken recipe I like to use to meal prep with. This is a good idea to make my meals last if i make a large batch of it I can usually make it last around 2-3 days or freeze it to last even longer. 

You will need for 4 servings-

600g of chicken breast- cut up

1.5 tsp of garlic powder, black pepper and salt

30 ml Soy sauce

65g Honey

50ml Soy Sauce

8 garlic gloves

50g Tomato Ketchup

20 ml of rice wine vinegar

1tsp corn flower

Cooked white rice

Method-

- Coat the chicken breast in garlic, salt, pepper and soy sauce.

-Cook your rice as per the packet instructions

- To create the sauce add in honey, soy sauce, minced garlic, rice wine vinegar and mix. 

-Cook the chicken then add in the sauce

-Mix the corn flower with 80ml of water and then add this in. Let this simmer for 5 minutes.

Plate up with the rice to enjoy.

This is a good recipe and fresh and nice to enjoy. It is also a good takeaway that tastes like a Chinese takeaway.

Other Ideas:

As it can cost a little bit more to buy ingredients fresh i also like to cook with Jar sauces too. Below are some of the ways I like to do this.

- Chorizo and tomato pasta. This involved cooking the pasta, chopping up the chorizo and then adding in a jar of tomato pasta sauce 

- Carbonara with bacon. This involves cooking and frying the bacon and then adding this into pasta with a carbonara sauce. 

-Udon noodles with chicken and sweet chilli garlic sauce. This is a packet of garlic and chilli sweet chilli sauce stir fry sauce. Cook the chicken then add this in with the noodles and sauce and let this all cook for 5-10 minutes.

- Chicken curry. Season and cook your chicken then add it in with the curry sauce and leave to simmer. Cook some rice alongside this too.

-Chicken Fajitas. These can be bought in a box kit which comes with the spices, wraps and salsa. This is a great quick but delicious meal.

Another great classic is a ham and cheese toastie. This can be done by simply putting it under the grill in the oven for a couple of minutes on each side and it is a great snack to have for lunch or for a small dinner.
