With Valentines right around the corner, this is the perfect recipe to impress with. It is also something I cook regularly and recently made it for family over the Christmas period. It is a creamy tomato pasta dish with a twist and something my family found delicious. It is perfect for university to freeze and have later.
This recipe is enough for four people (4 days of meal prepping) so half this if you are making a delicious valentines dish.
Ingredients
4 Chicken Breasts
Chicken Seasoning (Enough to coat the chicken)
Olive Oil (for cooking the chicken in)
3 Garlic Cloves (finely chopped/ crushed)
170g Sun dried tomatoes (You can get these in Sainsbury’s, drain them and chop into finer slices)
1tsp Mixed Herbs
2tsp Paprika
250g Pasta (Your choice of shape)
650ml Chicken Stock (Go per stock cube packet instructions)
150ml Double Cream
50 Grated Parmesan
Method
1. Add the chicken seasoning to the chicken and rub it in until it is fully coated. Add salt and pepper if desired.
2. Heat the oil over a medium heat And add in the chicken pieces. Cook for 5 minutes stirring occasionally.
3. Reduce to a low- medium heat and add in the garlic, tomato’s, mixed herbs and paprika. Stir and let cook for 3-5 minutes. Ensure you have your chicken stock made in this time.
4. Add in the uncooked pasta and chicken stock. Stir and place the lid on the pan. Cook for 20 minutes or until the pasta is fully cooked and liquid is mostly absorbed.
5. Turn the heat to the lowest setting and add the cream. Stir for 3-5 minutes. Add in the Parmesan.
Thats it! Simple and easy and your pasta is now ready to be served and enjoyed by all.
If you are making this for yourself at university or you just have left overs. To meal prep, wait until the pasta is completely cooled and then divide into tubs. Place them in the fridge (If you wish to consume within 2 days) or the freezer (to be consumed at a later date).
When reheating from the fridge place in the microwave for 3 minutes until the chicken is piping hot. When reheating from the freezer ensure that you defrost properly first in the fridge for 24 hours and then reheat in the microwave.
