Three fun-filled recipes

Easter is fast approaching. With spring and the weather all lovely outside, Easter is on the 20th of April this year and what a better time to enjoy some delicious baked goods?!

In this blog we will be discussing some easter baking ideas with some simple recipes for you to enjoy with your flatmates.

Easter baking isn’t about perfection. It’s about having a fun time with your flatmates and enjoying some yummy treats. It’s pastel colours, mini eggs, fluffy cupcakes, and lots of icing!

Easter nests

First up is some classic easter baskets! It isn’t easter without these! They also last a good while in the fridge so you can make them up now in time for easter! And maybe even take them home to your parents for a delicious snack to make them smile.

These are simple, fun, quick and easy.

Ingredients

  • 200g Milk Chocolate
  • 85g Shredded Wheat (or your cereal of choice, it could be cornflakes or Rice Krispies)
  • Cupcake cases

Method

  1. Melt the chocolate in a bowl in the microwave for intervals of 30 seconds. Make sure to stir every thirty seconds so the chocolate does not burn.
  2. Place the cereal into a larger bowl and then pour the chocolate on top. Mix with a modern spoon until all is coated adding more chocolate if needed.
  3. Spoon into cupcake cases and place into the fridge overnight for them to set

Mini egg brownies

Ingredients

  • 200g Butter
  • 200g of milk or dark chocolate
  • 3 eggs
  • 250g caster sugar
  • 100g Plain flour
  • 50g Cocoa Powder
  • 240g Mini eggs

Method

1.        Heat the oven to 180 degrees

2.        Melt the butter in a bowl in the microwave, stirring every 30 seconds and then do the same with the chocolate. Mix them together.

3.        In a large bowl mix the eggs and sugar and gradually pour in the chocolate and butter.

4.        Spoon in the flower, cocoa powder, mini eggs and a pinch of salt.

5.        Grease the tray, Add into a tin, and spread out. Add some extra mini eggs on top

6.        Bake for 25 minutes

Easter egg blondies

I personally love some blondies-these are a great alternative to brownies!

Ingredients

  • 250g butter
  • 150g brown sugar
  • 125g caster sugar
  • 2 eggs
  • A pinch of salt
  • 1 and a half teaspoons of vanilla extract
  • 200g plain flour
  • 225g mini eggs

Method

1.        Heat the oven to 190 degrees

2.        Melt the butter in a pan and then stir in the sugar, mix for 2 minutes and then take off the heat and add to the side

3.        Whist in the eggs, vanilla and salt and then add in the butter mixture and the flour

4.        Bake for 20 minutes

5.        Add the eggs on top to decorate
