Ingredients 

Ingredients for Pasta Sauce/Chicken Spices: 

  • 1tsp garlic powder
  • 1tsp paprika powder
  • 1tsp chilli flakes 
  • Salt to your taste 
  • 1tsp black pepper 
  • 1tsp mixed herbs 
  • 1tsp chilli powder (optional) 

Ingredients for pasta sauce: 

  • Bell pepper 
  • Passata Sauce 
  • Garlic paste 
  • 300ml cream 
  • Spices listed 
  • Pasta (rigatoni) 
  • Red Leicester Cheese

Ingredients for chicken 

  • Spices listed 
  • Panko breadcrumbs 
  • Egg
  • Flour
  • Red Leicester Cheese
  • Mozzarella

 Method 

  1. First, gather all your ingredients and put your pasta to boil on the stove. 
  2. Next, chop your bell pepper and start sautéing the bell peppers, and garlic paste in a little butter. Then add in your tomato sauce, and spices and mix well. 
  3. Remove 1/4 of the marinara sauce and set aside for later. Add cream and cheese to the remaining sauce and mix well. Add the pasta to the sauce and mix together.
  4. Marinate the chicken with the same spices and leave aside for an hour. 
  5. After the chicken is done marinating, coat in flour, then egg, and then panko breadcrumbs and shallow fry in hot oil.
  6. Once the chicken is done, top it with the leftover marinara sauce, red Leicester cheese, and mozzarella and put under the grill to allow the cheese to melt
  7. Serve the pasta hot with the chicken on top for the perfect evening meal.
