Quick, easy, and budget-friendly recipes

Hello my fellow lazy readers!

Let’s be real - some days, cooking feels like the last thing you want to do, and to our loyal readers who read my blogs, I’m sure by this point, you understand my hatred for cooking😭. Maybe you’ve had a long day of classes, or an exhausting shift at work, or you’re just feeling plain lazy. Here are some go-to meal ideas that are quick and easy. Some of these you might just need common ingredients you’ll probably already have in the kitchen, some you need extras but they’re still easy to make.

1. Egg fried rice

What you need:

  • 1 day old rice (for best results, slightly on the drier side and refrigerated rice)
  • 1-2 eggs - you’ll have to trust your intuition on this
  • Any veggies you have on hand - peas, corn, carrots. No veggies is fine too.
  • Spring onions
  • Soy sauce
  • Fish sauce (optional)
  • MSG
  • Cooking oil

How to make it:

Crack your eggs into the rice and mix. Heat some oil in a pan. Add your rice and veggies to the pan and stir everything together. Add soy sauce, fish sauce, and MSG. You gotta trust your guts here or just taste as you go. Stir for a bit more and it’s done!

Notice how I didn’t provide with any detailed information? It’s because it’s THAT easy that you don’t need any instructions!

2. Pizza wrap

What you need:

  • Tortilla wrap
  • Tomato sauce (ketchup if you don’t have anything else)
  • Cheese
  • Any toppings you have (chicken, veggies, pepperoni, etc.)

How to make it:

Spread tomato sauce on your wrap. Sprinkle cheese and toppings. Bake in the oven for 5 minutes. DONE.

3. Omelette wrap

What you need:

  • 2 eggs
  • Cheese
  • Any leftovers - veggies, cooked meat
  • 1 tomato
  • Wrap

How to make it:

Chop tomatoes in cubes. Beat the eggs and pour them into a hot pan. Scramble it and add cheese and any leftovers. Once cooked, fold it up in a wrap along with the tomatoes.

4. One-pot pasta

What you need:

  • 8 ounces of pasta (those twirly ones)
  • 1 1/4 cups of pasta sauce
  • 2 1/2 cups of water
  • Onion
  • 2 garlic cloves
  • Veggies - mushrooms, tomatoes, spinach
  • Salt, pepper

How to make it:

It is very important to note that the liquid measurements are CRUCIAL and you HAVE TO be precise!! Add uncooked pasta to a large pot. Add all the remaining ingredients (if you’re using spinach, leave that out for now), mix well and bring it to a boil. Once boiling, reduce the heat to a medium and cook the pasta for 10-14 minutes. Stir it every 2 minutes. If using spinach, add it like a minute before you turn the heat off.

Eating well as a student is very important, since we use our brains so much to the point of exhaustion. But you also don’t want to spend hours in the kitchen, so hopefully with these quick and easy meals, you can save money, time, and effort while still enjoying the food that’s actually good for you. So next time you’re tempted to just make instant noodles, look for this blog!! Thank me later, lol.
