In this blog we will will be giving you some meal ideas to cook.
On October 1st it was World Vegetarian day! This is a day where it is encouraged to celebrate vegetarian lifestyle and encouraging others to adopt a plant based diet. This also starts the beginning of world Vegetarian month. In order to help celebrate this we will be giving you some ideas of vegetarian meals to cook throughout this next month or just whilst you live at University.
These ideas don’t just have to be for Vegetarians, they are also just great healthy options to ensure you get your 5 a day and have a balanced nutritious diet. They can also be cheaper options as sometimes meet can be expensive.
We will then go through a nice simple recipe which you can make yourself within university accommodation to have a nice easy meal.
Here are some ideas you could have:
- Butternut Squash Curry- Has your five a day and nice spices and can even use reduced fat coconut milk for a healthier options.
- Healthy Tacos- using lots of vegetables greens and beans. Can also be used with vegan meat substitute.
- Vegan Aubergine Curry- Using lots of different spices and red lentils in order to have a healthy curry.
- In October you could do a roast pumpkin (Halloween time!) salad with chickpeas and greens.
- Vegan Risotto using peas, courgette, parlay and Parmesan for a lovely risotto.

So… the recipe we will be looking at is a Bombay Omelette.
This is a simple quick recipe to have a nice quick healthy Vegetarian dinner.
You will need…
1/2 a red onion
2 small tomatoes
4 eggs
50g of Spinach
2 knobs of butter
and then for seasoning…
1/2 Teaspoon of turmeric
1/2 Teaspoon of garam masala
1/2 Teaspoon of cumin
1/2 a lemon
green chilli
( you can also buy mixed seasoning which may be a cheaper alternative)
1. Peel and chop the onions, tomatoes, coriander and chilli.
2. Whilst the eggs in a bowl and then add in the cumin, garam masala and turmeric and the onions and tomatoes. Mix. This is your omelette mixture.
3. Toss the lemon in with the spinach.
4. Melt the butter in a pan and add in the omelette mixture swirl them around for 2 minutes. Then leave for a minute before placing onto a plate. Pop the spinach in then fold the omelette in half. It is now ready to serve.
We hope this has helped with some ideas of Vegetarian recipes. These are a good idea to reduce your meat intake and to try some home cooked healthy meals.
