Cooking as a student can sometimes feel stressful, especially when you are trying to balance lectures, assignments, shifts and social life. It can also be difficult sticking to a budget while still eating well. In this blog, I will be sharing a really simple and affordable meal that is perfect for students: a one-pot chickpea curry. It is quick, filling, and uses ingredients that most people already have in their kitchen.
Why this recipe works for students:

Ingredients (serves 2-3)
- 1 can of chickpeas
- 1 can of chopped tomatoes
- 1 onion, diced
- 2 cloves of garlic, minced (or garlic paste)
- 1 tbsp curry powder
- 1 tsp chilli powder (optional)
- 1 tsp turmeric
- 1 tsp cumin
- Salt and pepper to taste
- 1 tbsp oil
Optional: A splash of coconut milk for creaminess
Serve with: rice, naan or even pasta
Method
- Heat 1 tablespoon of oil in a pot or pan over medium heat.
- Add the chopped onion and cook for 3 to 4 minutes until soft and slightly golden.
- Stir in the garlic and cook for another minute until fragrant.
- Add your spices curry powder, turmeric, cumin, and chilli powder if you want more heat. Stir well to coat the onions.
- Pour in the drained chickpeas and add the chopped tomatoes. Mix everything together.
- Let the curry simmer for 10 to 15 minutes on low heat. Add a splash of water if it becomes too thick. If you are adding a little bit of coconut milk, add it here for a creamier texture.
- Taste and season with salt and pepper as needed.
Serve hot with rice or naan for a complete meal.
One of the great things about this recipe is that you can change it depending on what you like or what you already have. If you have vegetables that need using up, such as peppers or spinach, you can add them in. If you prefer more spice, add chilli powder. If you want something milder, reduce the seasoning. It is a flexible recipe that works for everyone.
